Estelle and Cyrille Bongiraud are the founders of Francuska Vinarija. Estelle is the daughter of a Burgundian winemaker. Cyrille is a geologist with a background in Romanée-Conti and a passion for amazing clay-limestone terroirs. Both have worked for more than 10 years in the vineyards on the border with Serbia, where the Danube acts as the border with Bulgaria and Romania. A wine country since Roman times in Pannonia (the name of the province in the Empire).

Estelle and Cyrille admit that they had difficulty convincing local winegrowers to lighten the vines. Old habits are hard to break… In any case, the yield never exceeds 30 hl/ha. And despite the heat, the use of sulphur at harvest time is less than 30 mg. No added yeast is used to start the fermentation.
