Sous le Sabot has undergone carbonic maceration and has been aged for 1 year in old oak barrels, which has given it a velvety texture. The wine is lively and light with a lovely aromatic palette.
On around 4 hectares, Olivier Renard cultivates the vines in Morgon and Beaujolais-Villages (in Lantignié and Saint Joseph) with horses in the oldest vines, and they are cared for without synthetic products, organically and biodynamically (certified organic and Demeter). Les Charmes has been organic for over twenty years and all the vines have been cultivated biodynamically since its establishment in 2017. The vinifications take place as close to nature as possible: maceration in cement tanks and then aging for a few months in oak or amphora barrels.
Olivier Renard uses natural sulfite in a very low dose to ensure bottling, that's all!
