2 days of maceration. Smooth, muscular and lively. Beautiful attack of candied lemon and white stone fruit. The palate is extended with oxidative notes of grilled almond and ends with salty notes. Ideal with Mediterranean fish, young hard cheeses or creamy poultry.

La Cave aux Fioles, located in Rivesaltes north of Perpignan, is a small organic estate run by winemaker Carlos Badia, who offers an exclusive production of natural and artisanal wines. The cellar is located in an old chapel (14th century), which allows him to vinify cuvées that are authentic and without unnecessary additives.
