🍇100% Bobal

One of the farmers Massimo works with is from a family that farms organically in Manchuela, where the Bobal grapes for this wine come from. Everything is hand-harvested, destemmed and macerated for 3 days with the skins before spontaneous alcoholic fermentation begins with natural yeast. The wine is aged in stainless steel tanks for 8 months before being bottled unfiltered and without sulphites. A still red (non-sparkling) that is fresh, light, juicy and easily tolerates chilling.
